The outstanding quality of the Kiedrich Gräfenberg (“Hill of the Counts”) vineyard was first documented in the late 12th century
a one hectare vineyard planted to Parpato and Catarratto
and theories emerged about vineyards being relatively safe provided the fires originated far away
A little more length and line would elevate it further
Mandolas is named after the vineyard from which it comes
white pepper and crushed rocks are finely delineated in a vivid NV Champagne to drink now and over the next few years
Extraction is done by pumping over in concrete vats and manually punching down the cap
Winemaking: Natively fermented aged in a mix of new and neutral barrels
ground ginger and the slightest hint of vanilla bean
The palate is silky and elegant and the tannins very fine
driest form
